These soft, fluffy, {Gluten free} cookies are super easy to make, thanks to your favorite cake mix!

Is there ever a wrong time for funfetti cookies? I think not! It's a fact that sprinkles bring the kid out in everyone. So why not have a little fun! (Lord knows we could all use a little fun these days.)
I have to admit, the cookies turned out pretty darn awesome.

These are so simple, exceptionally soft and perfect for every occasion! Whether you decide to make these for your next Holiday cookies swap or for no reason at all, you won't be disappointed.
Ingredients for {Gluten Free} Funfetti Cake Mix Cookies:
- 1 box of gluten free funfetti cake mix
- 2 eggs
- ⅓ cup vegetable oil
- ⅓ cup rainbow sprinkles
- Optional: white chocolate chips
If you don’t already have these items on hand, get your booty to the store and buy them asap.

Start by preheating the oven to 375 degrees F. In a large bowl, mix together cake mix, eggs and vegetable oil.
Shape dough into small balls and place them on a prepared baking sheet.
Bake for approximately 10 minutes. Remove and let them cool on a wire rack.
**One thing I learned while working on this recipe is you definitely don’t want to over bake your cookies. Just slightly under baking them is what gives them their soft insides. I typically bake mine for about 9-10 minutes but every oven varies.
When your cookies have cooled, you have the option to dip them into melted white chocolate for a little extra flare. But, honestly, who would choose not to?!
