Marinated Asian Cucumbers: Light, refreshing, and vibrant in flavor. This super fast dish makes a great side to any Asian inspired meal.
I’ve really been trying to focus on easy recipes lately because I feel SO crunched for time. As a result, you’ve seen more quick recipes like my Ultimate Avocado Greek Breakfast Toast and Lemon-Garlic Shrimp and Broccoli. Both of which come together quickly, and taste amazing! My new recipe for today is a very simple dish to throw together ahead of time, so that you have less to deal with when $h*t hits the fan.
These Marinated Asian Cucumbers are unlike any other cucumber dish you’ve been serving, and perfect as a side dish or quick snack option.
WHAT INGREDIENTS DO I NEED?
- 4 mini cucumbers
- 3 Tbsp seasoned rice wine vinegar
- 1 Tbsp peanut oil or sesame oil
- 1 tablespoon sugar
- 2 tsp sesame seeds
- 1 tsp red pepper flakes
- 1 Tbsp soy sauce
HOW DO I MAKE MARINATED ASIAN CUCUMBERS?
STEP 1: Start by slicing the mini cucumbers into bite sized pieces.
STEP 2: Combine the cucumbers with all of the remaining ingredients in an airtight container. Give it a good shake and that's it! Store in your refrigerator until you are ready to serve.

Marinated Asian Cucumbers
Ingredients
- 4 mini cucumbers
- 3 tablespoon seasoned rice wine vinegar
- 1 tablespoon peanut oil or sesame oil
- 2 teaspoon sesame seeds
- 1 teaspoon red pepper flakes
- 1 tablespoon soy sauce
- 1 tablespoon sugar
Instructions
