I believe everyone needs a classic chocolate chip cookie recipe in their life, even if you are living a gluten free lifestyle. I know there are hundreds of chocolate chip cookies recipes out there. But, we can never have enough, am I right?
In my mind, this homemade recipe really stands out. It's simple to make, and yields beautiful cookies that are golden brown, chewy, yet crisp, thanks to the crispy cereal.
What ingredients do I need?
- Butter - softened
- Brown sugar
- Sugar
- Vanilla
- Eggs
- Gluten free flour
- Baking powder
- Baking soda
- Gluten free oats
- Rice "crispy" cereal
- Semi-sweet chocolate chips
**Kellogg’s Rice Krispies are made with malt syrup, derived from barley, which is a gluten-containing grain. So they are NOT considered gluten free. There are other brands that create "rice crispy" type of cereal that you can use instead.
How do I make {Gluten Free} Chocolate Chip Rice Crispy Cookies?
This recipe is very simple to make! I am not a baker by trade, so if I can make them...I know you can, too!
Step 1 - Mix together sugars and butter.
Step 2- Add vanilla, eggs, gluten free flour, baking powder, and baking soda. Mix well.
Step 3- Stir in gluten free oats, rice "crispy" cereal, and semi-sweet chocolate chips.
Step 4- Scoop out mounds of the dough on a prepared baking sheet. Bake at 350 degrees F. for approximately 8-10 minutes. Remove and let cool.
