Soft cookies with crunchy granola bits through out. Full of cinnamon, buttery flavor. You're guaranteed to love these Granola Cookies.

If you are a fan of oatmeal raisin cookies, you will love these! They have a similar flavor of oatmeal cookies, but with delicious pops of crunch from the granola spread throughout.
They might seem simple, or even strange, but they are super addictive with a cup of coffee or a cold glass of milk.

WHAT INGREDIENTS DO I NEED?
- ½ cup melted butter
- ½ cup white sugar
- 1 cup brown sugar
- 1 egg
- 2 teaspoon vanilla
- 1 ½ cup flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- 1 teaspoon salt
- ½ teaspoon cinnamon
- 2 cups granola - I prefer this Honey Almond Granola from Sam's Club because it has a mixture of oats, rice, and almonds.

HOW DO I MAKE GRANOLA COOKIES?
Start by preheating your oven to 350 degrees F.
In a microwave safe bowl, melt the butter. Mix together the melted butter, white sugar, brown sugar, egg and vanilla until smooth.
In a separate bowl, whisk together the flour, baking soda, baking powder, salt and cinnamon.
Carefully, mix together the wet and dry ingredients until a soft dough forms. Then fold in the granola.


Once your granola is evenly disbursed throughout the dough, scoop your dough onto your baking sheets. Leaving them a couple inches apart.
**I made larger cookies, so I used an ice cream scoop. Feel free to use a smaller cookie scoop if you want smaller cookies.
Bake for approximately 10 minutes, then remove and let cool.
