What ingredients do I need for Greek Eggs for One?
- 2 eggs
- ¼ cup red onion - chopped
- 1 cup baby spinach
- 1 tablespoon olive oil
- 3 artichoke hearts - chopped
- ¼ cup feta cheese
- Optional garnish: fresh parsley & additional feta
How do I make Greek Eggs for One?
In a skillet, heat olive oil.
Sauté red onion until tender, then stir in baby spinach until wilted.
Remove from heat and place in a small ramekin.
Top with chopped artichoke hearts, feta cheese, and two cracked eggs.
Bake at 375 degrees F for approximately 12-15 minutes (or until eggs are cooked to your preference).
Remove from the oven and top with fresh parsley and additional feta.
