Fall is that time of year where everyone busts out their baking pans and rolling pins. Whether it's to make cakes, muffins or cookies...fall is the official start of "baking season."
This year, instead of automatically jumping into full-force overindulging, try my light recipe for Healthy Apple Oatmeal Bars. They are the perfect after school snack for kids (or coffee break treat for adults). Made with oats, natural ingredients and no added refined sugar, there will be no guilt while enjoying these tasty, chewy bars.
What ingredients do I need?
- 2 cups oats
- 1 apple-chopped
- ¼ cup natural peanut butter
- ¼ cup honey
- 2 eggs
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- ½ cup raisins
How do I make Healthy Apple Oatmeal Bars?
Start by chopping or shredding 1 apple into tiny pieces.
In a large bowl, combine the apple with the remaining ingredients and mix well.
Pour mixture into a baking dish and press down firmly. (I used a square 9x9 dish). Bake at 350 degrees F for approximately 20-25 minutes.
When it is finished baking, remove from oven and let cool before slicing.
Whether you decide to enjoy these bars for breakfast, as a snack or dessert, I can assure that you will be one happy camper this fall.

I made these Apple oatmeal bars but I put more apples and raisins in them and they are delicious. I am trying to eat a lot healthier and these will be great with my morning coffee.
