The combination of sweet pineapple, fresh cucumbers and spicy jalapenos balances beautifully, making each bite burst with flavor. This Spicy Cucumber Pineapple Salad is perfect for busy weekdays or an easy side dish at summer BBQs!
WHAT INGREDIENTS DO I NEED?
- 4 cups fresh pineapple
- 1 English cucumber
- ½ cup red onion
- 1-2 fresh jalapeños
- 1 cup fresh cilantro
- 2 tablespoon olive oil
- Juice of 1 lime
- drizzle of honey (or agave nectar)
- salt & pepper to taste

HOW DO I MAKE SPICY CUCUMBER PINEAPPLE SALAD?
Start by chopping the pineapple, cucumber, red onion, and jalapeños into bite-sized pieces. Finely, chop the cilantro as well.
In a large mixing bowl, combine all of the chopped ingredients. Top with olive oil, lime juice and a drizzle of honey (You could use agave nectar if you wanted to make the recipes vegan). Toss well. Add salt & pepper, to taste.

Transfer to a serving dish, if you want to enjoy immediately. I prefer to store mine in the refrigerator for an hour or two before serving. That way the ingredients are integrated a little more and the salad is nice a cool.
