This simple appetizer is the perfect recipe to keep in mind for your next summer party. It so easy, even the kids could make it for you....hint, hint.
Whenever I am in need of a quick appetizer for a crowd I normally run to cold vegetables with dip. A platter full of different veggies is normally a safe bet.
But, for those random occasions where I'm in the mood for something more fun than veggies with dip, I like to make these Cucumber Tuna Bites.
It is an easy no cook appetizer that is light and refreshing. Plus, as a bonus...you don't have to worry about people double-dipping in a big bowl of dressing, since they already have a scoop of tuna on their cucumber.
What ingredients do I need?
- cucumber
- canned tuna
- Greek yogurt
- spicy mustard
- lemon juice
- green onions- finely chopped
- hot sauce (choose your favorite)
- Paprika (optional)
How do I make Cucumber Tuna Bites?
Step 1: start by opening and draining one 12 oz. can of tuna. Make sure as much of the liquid is gone before adding the other ingredients. You don't want the tuna to be too watery when you are trying to scoop it on to the cucumber.
Step 2: Slice one large cucumber into ¼ inch thick pieces. If you are prepping this dish early, go ahead and put the cucumber slices into a container or ziplock bag and back into the refrigerator so they stay cold and crisp.
Step 3: Place the drained tuna into a mixing bowl, along with one tablespoon of Greek yogurt, one tablespoon of spicy mustard, chopped green onion, one teaspoon of lemon juice, and one teaspoon of hot sauce. Mix well, and place in the refrigerator so it too can stay cold until the party starts.
Step 4: Once you are ready to plate your appetizer, place the cucumber rounds on a large serving tray. Add a scoop of the tuna mixture onto each round and top with a dash of paprika.
Easy as that! Talk about a low-carb and healthy appetizer!

Ingredients
- 1 large cucumber

Instructions

- Spoon a small amount of the tuna mixture onto each cucumber slice.
- Sprinkle paprika on top if desired.

And there's no way - short of adding a lot more Greek yogurt - that we can ever get them looking as white as they do in your picture.... I've tried adding twice as much yogurt and they still have the color of tuna. Maybe 4X the yogurt and more hot sauce? Thanks.

Mr Hester, give the skin a shot. As my dear abuelita was fond of saying, the most nutritious part of the potato is that beneath the skin; i.e., if you're peeling you're losing much goodness. It might be assumed the same holds true for the cukes.
