Move over boring pasta salads! This lightened-up Grilled Chicken Pasta Primavera is the new pasta dish in town!

As you could guess, I am not a fan of processed mac-n-cheese or heavy, ground beef filled lasagna. I'm more of a veggie filled, gluten free pasta kinda girl.
If you are on the same page, you will loooove this recipe. It's easy to throw together last minute and full of different flavors and textures.
Bright, vibrant and kid-friendly...it's an ideal, healthy dish for any busy family.

HOW DO I MAKE GRILLED CHICKEN PASTA PRIMAVERA?
Begin to cook 15 oz. of your preferred type of small pasta shells (I used gluten free). While the pasta is cooking, grill 1 chicken breast and chop into bite sized pieces.
In a large skillet, sauté the following ingredients:
- 4 tablespoon olive oil
- 2 teaspoon minced garlic
- 2 teaspoon dried parsley
- 1 tablespoon dried oregano
- ⅓ cup red onion- chopped
- 1 14.5 oz can diced tomatoes
- 1 13.75 oz jar artichoke hearts (drained)
- 1 medium zucchini- chopped
- 2 cups mushrooms- chopped
- 1 cup broccoli- chopped
Once the zucchini, broccoli and mushrooms become tender (approximately 10-15 minutes) carefully stir in 1-2 cups of tomato sauce. Add more or less tomato sauce, depending on how tomato-ey you want the dish to be. Continue to simmer until everything is heated.
In a large bowl, combine pasta, chopped chicken and sautéed vegetables. Top with fresh basil and Parmesan cheese, if desired.

Grilled Chicken Pasta Primavera
Ingredients
- 15 oz. preferred type of small pasta shells
- ⅓ cup red onion- chopped
- 1 14.5 oz can diced tomatoes
- 1 13.75 oz jar artichoke hearts (drained)
- 1 medium zucchini- chopped
- 2 cups mushrooms- chopped
- 1 cup broccoli- chopped
- 1 chicken breasts
- 4 tablespoon olive oil
- 2 teaspoon minced garlic
- 2 teaspoon dried parsley
- 1 tablespoon dried oregano
- 1-2 cups of preferred tomato sauce
Instructions
- Begin to cook pasta according to package.
- While pasta is cooking, grill 1 chicken breast then chop into bite sized pieces.
- In a large skillet, sauté all remaining ingredients (minus tomato sauce) until the zucchini, broccoli and mushrooms become tender (approximately 10-15 minutes).
- Carefully stir in 1-2 cups of tomato sauce and continue to cook until heated.
- In a large bowl, combine pasta, chopped chicken and sautéed vegetables.
- Top with fresh basil and Parmesan cheese, if desired.
