HOW DO I MAKE SWEET POTATO CHOCOLATE CHIP CHAI COOKIES?
Start by peeling and chopping 2 cups of sweet potato. Cook your potatoes until they become easily mash-able (I used a microwavable steamer, but feel free to boil if you want).
Place your cooked sweet potatoes in a large bowl and mash with a potato masher or fork. Then stir in the following ingredients:
- 1 cup gluten free flour
- 3 tablespoon chocolate chips
- ⅓ cup maple syrup
- ¼ cup honey
- 1 tablespoon chai spice (I used my Homemade Chai Mix)
Once your ingredients are well mixed spoon small mounds of the dough onto a prepared baking sheet. Bake at 350 degrees F for approximately 15 minutes. Carefully remove from oven and let cool.
Baking season has begun! Charm your guests with a batch of these Sweet Potato Chocolate Chip Chai Cookies. They will gobble them up in no time.
