If you're celebrating Thanksgiving with just a few people, or none at all, this Easy Sheet Pan Thanksgiving Dinner is a great way to still enjoy all your holiday favorites!
While Thanksgiving is usually a huge feast, full of meats, casseroles, breads, and desserts....sometimes that just isn't necessary for everyone.
This year, my husband is deployed so I will be making a smaller version of a Thanksgiving dinner for myself and my kids. This sheet pan dinner is the perfect amount for us, and doesn't require me to be slaving away in the kitchen all day.

WHAT IS INCLUDED IN A SHEET PAN THANKGIVING DINNER?
- Turkey breast or turkey tenderloin
- Boxed stuffing mix
- Fresh green beans
- Potatoes
HOW DO I MAKE A SHEET PAN THANKSGIVING DINNER?
STEP 1: Prepare the boxed stuffing by combining 1 ½ cup warm water with the dry mix. Add ¼ cup butter, cut into chunks. Stir together, the spread on half of your baking sheet.
STEP 2: Peel & thinly slice 1 large russet potato. Drizzle with 1 tablespoon olive oil and top with salt & pepper. Spread them on the other half of your baking sheet.
STEP 3: Place your turkey breast or turkey tenderloin on top of your stuffing. (I used a pre-seasoned tenderloin for this recipe).
STEP 4: Bake at 375 degrees F. for 20 minutes. (While these are cooking, prepare your green beans, by trimming off the ends and tossing with olive oil & salt.)
STEP 5: Remove tray from oven, toss the potatoes then push them over to one side. Add the green beans and return the tray to your oven.
Continue to cook for another 30-40 minutes, or until the turkey is cooked through and the potatoes and green beans are tender.
**Turkey breast and/or tenderloin should reach an internal temp of 165 degrees F.**
