I'm pretty sure the hot, stuffy temperatures of summer call for everyone to enjoy a frozen treat. It's basically a rule. (I know it's written down somewhere...I just don't remember where.) The tricky part isn't deciding IF you should have a treat, it's WHAT you should indulge in without over doing it.
What's even more difficult is finding a cooling treat that hits the spot for those of us who can't consume dairy, or choose not to. Luckily, these Banana Split Bites do just that. They are perfectly portioned for easy snacking and are ridiculously tasty. Watch out, because once you make them your summers will never be the same.

What could be more fun than bite-size banana splits? Honestly, how cute are these little guys? They are the ultimate party treat you can enjoy without worrying if you just messed up all your hard work at the gym. Just pop one little bite (or three).

HOW DO I MAKE BANANA SPLIT BITES?
To create my Banana Split Bites, begin by cutting 2-3 bananas into thin slices. Spread the slices onto a large plate, but make sure the plate will be able to fit into your freezer.
Next, using a mellon baller, scoop out small mounds of the So Delicious Dairy Free® Coconut Milk Simply Strawberry and place on each banana slice. When you have topped each slice, place the plate in your freezer for approximately 1-2 hours.

Before you remove the bananas from the freezer, you will create the chocolate topping:
In a small bowl, place 1 cup of chocolate chips (or carob chips) along with 1 tablespoon of coconut oil. Microwave for about 10 seconds then stir so that the melted coconut oil covers all of the chocolate chips. Return to the microwave and cook for another 30 seconds. Stir the chocolate and set aside.
For this next part you have two options for how to top them with chocolate:
- The first option is to place the banana bites on a cooling rack, with a baking sheet underneath, and completely drowning them in the melted chocolate :).
- The second option is to leave the pieces on your plate and simply drizzle the chocolate over top. There is no wrong way!
Once you are finished coating them in chocolate, return them to the freezer for another 2-3 hours. After that, you can place your Banana Split Bites in an airtight container for whenever your sweet tooth strikes.

Banana Split Bites
Ingredients
- 2-3 bananas
- 1 pint of So Delicious Dairy Free® Coconut Milk Simply Strawberry
- 1 cup of chocolate chips or carob chips
