Vegetable Sausage Soup= A "soup-er" simple recipe, packed with veggies and perfect for chasing away the winter chill!

This Vegetable Sausage Soup is the perfect addition to your winter soup rotation. It's loaded with veggies and flavor your family and friends will love. You can easily make it in a slow-cooker or on the stove top, whatever works with your busy holiday schedule.
HOW DO I MAKE VEGETABLE SAUSAGE SOUP?
Start by combining the following ingredients in your slow-cooker and set to LOW. Cook for approximately 5-6 hours:
- 1 green bell pepper- chopped
- 2 cups broccoli- chopped
- 1 cup carrots- chopped
- ⅔ cup white onion- chopped
- 6 oz tomato paste
- 32 oz vegetable broth
- ½ teaspoon ground oregano
- 1 teaspoon herbs de provence
- Dash of Salt/pepper
(If you are cooking on stove top, simply bring your ingredients to a boil, then lower to simmer and cook until the vegetables have desired tenderness).
When you are about 15-20 minutes away from serving, add 3-4 cups of a spinach & kale mix and 8-10 oz sliced veggie sausage. (Feel free to use your preferred type of sausage- turkey, chicken, etc).

Ingredients
- 1 green bell pepper
- 2 cups broccoli
- 1 cup carrots
- ⅔ cup white onion
- 6 oz tomato paste
- 32 oz vegetable broth
- 3-4 cups spinach & kale mix
- 8-10 oz veggie sausage
- ½ teaspoon ground oregano
- 1 teaspoon herbs de provence
- Salt/pepper to taste
Instructions
- Chop all the vegetables into bite-sized pieces then place into slow-cooker.
- Add vegetable broth, tomato paste, and dry seasonings.
- Set to LOW, cook for approximately 5-6 hrs.
- When you are about 15-20 minutes away from serving, add spinach & kale mix and sliced veggie sausage.
- Add salt & pepper to taste.
