Skinny Breakfast Casserole: A super simple, veggie-loaded breakfast casserole that comes out perfect every time!

We love easy breakfast recipes in our house. This Skinny Breakfast Casserole is no exception. It's simple to make and feeds a crowd! Packed with eggs, potatoes, veggies and veggie (or turkey) sausage, it's a fully satisfying breakfast in one dish.

WHAT INGREDIENTS DO I NEED?
- 1 orange bell pepper - chopped
- ½ red onion - chopped
- 4 cup frozen diced hashbrowns
- 14-16 oz preferred breakfast sausage (I have used veggie and turkey for this recipe)
- 9 eggs
- 1 teaspoon minced garlic
- ¼ cup nutritional yeast (or preferred type of cheese)
- dash of salt
Make sure you save this recipe for the future. Especially with the holidays! You can easily refrigerate or freeze for later. It's great for breakfast, lunch or dinner.

HOW DO I MAKE A SKINNY BREAKFAST CASSEROLE?
In a large skillet begin to brown breakfast sausage. Once the meat is cooked and crumbled, remove from the skillet.
Next, add the chopped bell pepper, onion and minced garlic. Cook until the peppers are slightly soft, then remove from heat.
You can always customize this recipe to your preference. Feel free to swap the type of sausage with your favorite, or leave out the onion if you are not a fan. It's your breakfast, be creative. Make it your own!

In a bowl, whisk together 9 eggs, nutritional yeast and salt.
Spray a large baking dish with nonstick cooking spray, then add the frozen hash browns. Layer with sautéed vegetables, cooked sausage, then top with the eggs.
It may seem like there are not enough eggs for this dish, but as the casserole bakes the eggs will fluff up nicely.


Bake at 375 degrees F for approximately 1 hour. Once the center of the casserole is firm, remove from oven and let cool slightly before serving. Garnish with fresh parsley, if desired.
