We all know how this time of year comes with football being on tv all the time. Lucky for my husband, I like to watch football. I guess that comes with the territory of being from Texas, where football is life.
But in all honesty, I love sitting on the couch, going to a bar, or watching football at a friends house. Doesn't matter where we are, it's fun to cheer on our team and hang with friends and family while doing so.
The downside of going to a football party is if you are watching your weight or training for a race. You can feel tempted by anything and everything. Believe me, I feel your pain!
Next time you are headed to a party or are planning one at your place, try out my Buffalo Cauliflower Bites. They have much less calories than the fried chicken wings normally served. There is no gluten or oil used in this recipe. But they come out tasting just as spicy and delicious as ever. Even if your team isn't looking so hot, these Buffalo Cauliflower Bites are a touchdown every time!

HOW DO I MAKE BUFFALO CAULIFLOWER BITES?
Start by chopping 1 head of cauliflower into bite sized pieces. In a large bowl, whisk together 1 cup gluten free flour, 1 ⅓ cup milk (use dairy free version, if desired), 1 teaspoon garlic powder,1 tablespoon onion powder and a dash of salt/pepper.
Dip the cauliflower bites into the batter and place on a cooling rack, over a baking sheet. This way the excess batter will drip off and the bites will be evenly cooked. Place the cauliflower (still on the cooling rack, over the baking sheet) in your oven and bake at 425 degrees F for approximately 20-25 minutes.
When they are finished baking, remove the cauliflower from your oven and place the bites into another large bowl.
Toss it with ⅔ cup of buffalo sauce and ⅓ cup of bbq sauce. Serve with chopped vegetables and your favorite dressing.

Ingredients
- 1 head of cauliflower
- 1 cup gluten free flour

- For sauce:
- ⅔ cup Buffalo Sauce
- ⅓ cup BBQ Sauce
Instructions
- Chop the cauliflower into bite sized pieces.
- In a large bowl, whisk together 1 cup gluten free flour, 1 ⅓ cup milk, 1 teaspoon garlic powder,1 tablespoon onion powder and a dash of salt/pepper.
- Dip the cauliflower bites into the batter and place on a cooling rack (over a baking sheet).
- Bake the cauliflower at 425 degrees for approximately 20-25 minutes.
- Remove and place the bites into another large bowl.
- Toss with ⅔ cup of buffalo sauce and ⅓ cup of bbq sauce.
- Serve with chopped vegetable and your favorite dressing. Enjoy!
