Instead of your typical store bought granola bar, try a batch of my homemade Chocolate Covered Cherry Granola Bars!

Homemade granola bars make the perfect grab and go snack. If you've ever wondered how to make homemade granola bars, trust me, they are easier than you think. These Chocolate Covered Cherry Granola Bars are just what you've been looking for. No bake and perfectly chewy!

WHAT INGREDIENTS DO I NEED?
- 2 cups oats
- 1 cup canned cherries - drained
- 1 cup mixed nuts- chopped
- ½ cup honey
- ⅓ cup natural peanut butter
- 1 tablespoon chia seeds
- dash of salt
- 1 tablespoon coconut oil
- ½ cup chocolate chips, dark chocolate or carob chips
What I especially love about homemade granola bars, is that they are easy to customize. If you don’t love peanut butter, feel free to use almond butter, or sunflower seed butter. If you don't have canned cherries, go ahead and use dried cherries(I've used both).

HOW DO I MAKE CHOCOLATE COVERED CHERRY GRANOLA BARS?
This simple recipe starts by combining oats, mixed nuts (chopped), and chia seeds. Feel free to add a few chocolate chips in there, if you want it to be extra chocolatey.
Next, in a sauce pan, combine honey, natural peanut butter, cherries and a dash of salt. Continue to stir the ingredients as they heat up. Do not bring to a boil...this is simply to heat the ingredients and get them to mix well together.

Pour the wet mixture over the granola mixture and stir well. Pour the mixture into a 9x9 baking dish (lined with foil or parchment paper). Place the container in your freezer to set.

While the granola is in the freezer, microwave the chocolate and coconut oil together. I heat for 30 seconds at a time, until creamy.
Pour the melted chocolate over your granola, and return to the freezer to set (approximately 30 minutes).

- 1 tablespoon coconut oil
