Grilling friends, I have a recipe for you! These Easy Grilled Artichokes are the perfect appetizer or side to add to your next meal.
Oh, artichokes, how I love thee! I could eat artichokes every day of the week and be a happy girl. Never could I imagine getting sick of them.
I especially love this recipe that grills them up to perfection. Tender on the inside, smokey charred marks on the out...they're insanely good! I have to give the credit to my dad on this one. He is the genius that came up with this amazing rendition.
WHAT INGREDIENTS DO I NEED?
- 2 artichokes
- Juice of 1 lemon
- ½ cup olive oil
- 1 tablespoon minced garlic
- 1 teaspoon salt & pepper
HOW DO I MAKE EASY GRILLED ARTICHOKES?
Start by trimming the top of 2 large artichokes. Cut them in half lengthwise and remove the "fuzzy" center of the choke.
Next, boil the artichokes for about 15-20 minutes. (This will help speed the cooking process along so the chokes don't over cook on the grill. They will become much more tender and not overly dry or tough from the flames.)
While they are boiling, in a small bowl, combine the following ingredients.
- Juice of 1 lemon
- ½ cup olive oil
- 1 tablespoon minced garlic
- 1 teaspoon salt & pepper
After the chokes have boiled for 15-20 minutes, remove and brush them with the olive oil dressing and place on a preheated grill.
Grill for approximately 5-10 minutes. Flip and brush with the oil mixture often until they are slightly charred. When they are finished, remove from grill and serve immediately. Season with additional salt & pepper if desired.

Easy Grilled Artichokes
Ingredients
- 2 artichokes

- Begin to heat a large pot of water. Once at a boil, add artichokes and cook for about 15-20 minutes.
