Oh, how I love warm sunny days in Texas. Blue skies, green grass and a cool breeze just call for the perfect picnic setting. The only thing that makes it better is enjoying it with my son.
Recently, I decided to have a mother-son picnic at our local park. It was a special day that I wanted to share with my son to be able to celebrate him being an "only child" for a little while longer. Although I can't wait for my 2nd son to enter the world, there is a small piece of me that will miss having just one little guy running around. He has been the easiest kid I could imagine and has brought such joy to my life. I can't believe how fast he is growing and that he will soon be the big brother.
Ok, enough of the sappiness...this is supposed to be a fun day!
For our special picnic, I decided to make a fresh and easy Hawaiian Pasta Salad that is full of chopped vegetables, juicy pineapple and chunks of ham. It's a satisfying meal wherever you decide to take it! The addition of the NEW Aquafina Sparkling made this meal, and our picnic, much more enjoyable. I am currently in love with the Black Cherry Dragonfruit flavor! It pairs well for a light meal and is easy to throw in a bag on your way out the door.

WHAT INGREDIENTS DO I NEED FOR HAWAIIAN PASTA SALAD?
- 4 cups dry pasta
- 4 scallions
- 2 cups cucumber
- 1 cup shredded carrots
- 1 green bell pepper
- 1 15 oz can pineapple chunks
- 2 cups cubed cooked ham
- ¾ cup sesame ginger dressing + additional for topping

HOW DO I MAKE HAWAIIAN PASTA SALAD?
To create my Hawaiian Pasta Salad, start by cooking 4 cups of pasta. (I used gluten free rotini, but feel free to use whatever you like.)
While the pasta is cooking, chop 2 cups of cucumber, 4 scallions and 1 green bell pepper. Next, drain 1 15 oz can of pineapple chunks.

Once the pasta is finished, add the chopped vegetables and pineapple, along with 1 cup of shredded carrots and 2 cups of cubed cooked ham. Then, stir in ¾ cup of sesame ginger salad dressing (use your preferred brand).
Mix the ingredients well and set in your refrigerator to cool. When you are ready to serve, add additional dressing if desired.
