These Homemade {Baked} Corn Dog Muffins are the perfect lunch box recipe for your kids!
I can't imagine my childhood without corn dogs (or "corney dogs", as I used to call them). They were my favorite lunch. But, what isn't fun about eating food off of a stick, honestly? It's like a right of passage for all kids to experience.
While, I'm not a totally strict mom when it comes to my kids eating, I do like to make healthier options for them. Instead of the usual frozen packaged corn dog, I decided to make my son a homemade version. That way I know exactly what is going into them and they aren't fried! (But, you can be rest assured I will still get him a classic corn dog at the fair).
Since, I'm not about to go to the store to buy sticks just to make legit corn dogs, I decided to use my new muffin tin. Why not? It's the perfect way to break it in.
HOW DO I MAKE BAKED CORN DOG MUFFINS?
First, start by creating the corn meal batter. Combine 1 ¼ cups all-purpose flour (or gluten free flour) with ¾ cup corn meal and ¼ cup sugar (or preferred sweetener). Add 2 teaspoon baking powder and ½ teaspoon salt.
Next you will whisk in the following wet ingredients:
- 1 cup low-fat milk (or dairy free milk)
- ¼ cup vegetable oil
- 1 egg
Pour the batter into your muffin tins and place chopped hot dog into the center of each muffin. I used turkey dogs, but feel free to use veggie dogs, traditional beef hot dogs, or whatever your family prefers.
Bake at 400 degrees F for approximately 15-20 minutes or until golden brown.
Carefully remove the pan from your oven and let the muffins cool before serving.
