What ingredients do I need?
- 16 oz whole baby bella mushrooms
- ½ cup olive oil
- ⅓ cup white wine vinegar
- ½ red onion- chopped
- 1 tablespoon minced garlic
- 1 teaspoon dark brown sugar
- 1 teaspoon peppercorns
- 1 teaspoon red pepper flakes
- 1 teaspoon dried oregano
- 1 teaspoon dried parsley
How do I make Marinated Cocktail Mushrooms?
Start by bringing a pot of salted water to a boil. Add 16 oz of baby bella mushrooms to the water and cook for approximately 4 minutes. Drain the water and set the mushrooms aside for now.
To create the marinade, combine all remaining ingredients. Whisk together and set aside.
Lastly, you will combine the mushrooms and marinade in an airtight container, then place in your refrigerator. Let the mushrooms marinate for at least 3 hours (the longer, the better). I sometimes make this recipe the night before a party, so that they have plenty of time to soak up all the amazing flavors in the marinade.

Instructions
- Bring a large pot of salted water to a boil.
- Add mushrooms, and cook for approximately 4 minutes.
- Drain and set mushrooms aside for now.
- In a mixing bowl, combine remaining ingredients to create marinade.
- Place mushrooms and marinade in an airtight container, and place in a refrigerator.
- Let mushrooms marinate for at least 3 hours. The longer the better!

If we Let them sit overnight. Do we keep them in the fridge on the counter?

If you let them sit overnight, I would store in the refrigerator then remove them about an hour or so before serving. That way, if the oils solidify in the refrigerator, they can come back to room temp and thin out.
