Just in time for Cinco de Mayo, my Skinny Mexican Casserole is simple to make and simply delicious!
I'm a sucker for Mexican food. It's sad to say, but Mexican food is definitely my weakness. I could sit down with a bowl of chips and salsa (and guacamole) and be the happiest girl in the world. Anyone else?
Not only am I from Texas, where Mexican food is life, but I also worked in a Mexican restaurant for a couple years. I'd like to say I learned the trade of cooking authentic Mexican recipes. But let's be real...I just sampled everything until I gained way too much weight.
With that being said, since Cinco de Mayo is right around the corner and I know it's the perfect excuse to let your healthy eating habits go out the window, I decided to make a lighter option for anyone craving a yummy Mexican meal.
This Skinny Mexican Casserole has layer upon layer of deliciously fresh and colorful ingredients. It's easy to make, rich in flavor and will please everyone at your party. Pair it perfectly with either Modelo Especial or Modelo Negra for the ultimate Cinco de Mayo feast.

What ingredients do I need?
- red onion
- red bell pepper
- fresh jalapeno
- black beans
- diced green chilies
- canned chicken
- red enchilada sauce
- brown rice
- Desired amount of fresh cilantro and avocado

How do I make Skinny Mexican Casserole?
To create my Skinny Mexican Casserole, start by chopping ½ red onion, 1 red bell pepper and 1 fresh jalapeno. Next, open the following canned ingredients:
- 1 15 oz can black beans (drained)
- 1 4 oz can diced green chilies
- 1 12 oz can of chicken (drained). *feel free to use grilled, rotisserie or baked chicken*
- 1 10 oz can of red enchilada sauce
In a large baking dish, pour a few tablespoons of the enchilada sauce on the bottom. Then layer with approximately 6 cups of cooked brown rice.
Add the black beans and chicken, followed by the chopped vegetables and last but not least the remaining enchilada sauce.
Cover dish with foil and bake at 375 degrees F for approximately 20-25 minutes.
When your casserole is finished baking, remove from oven and top it with fresh cilantro and sliced avocado.
