WHAT INGREDIENTS DO I NEED?
- 2 cups oats (blended to flour)
- 3 ripe bananas (mashed)
- 2 scoops vanilla protein powder
- 2 eggs
- 1 cup cottage cheese (blended)
- ¼ cup honey
- 2 tablespoon light brown sugar
- 2 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- dash of salt
- ¼ cup chopped pecans

HOW DO I MAKE PROTEIN BANANA NUT MUFFINS?
Start by preheating your oven to 350 degrees F. You can either spray a muffin tin with nonstick cooking spray or use cupcake liners. This recipe makes approximately 18 muffins.
In a food processor or blender, pulse 2 cups of oats until you have a flour. Remove the flour from the food processor, then add 1 cup cottage cheese and blend until smooth.
In a large bowl, mash 3 bananas, then mix in the blended cottage cheese, eggs, vanilla, sugar and honey.
Add blended oats, cinnamon, protein powder, baking soda, baking powder, and salt. Mix well, then fold in the chopped pecans.
Spoon batter into prepared muffin tins. Bake for 22 minutes. Then remove and let cool.
