This Roasted Cod with Broccoli & Cauliflower recipe calls for all the ingredients to go into one pan then into the oven; easy and delicious!
I try to cook fish at least once a week. Especially now that I am expecting my first child, I try to eat it often to help lower the chance of developing post-pardon depression.

I love it when I can make a meal with only one pan. Main reasoning behind this...less stuff to clean up, duh!
How do I make Roasted Cod with Broccoli & Cauliflower?
To prepare this recipe, I first chop up one head of cauliflower and broccoli into bite size pieces and place it in a large roasting pan. I then put two fillets of cod in the middle of the pan.
The seasonings are pretty simple. I drizzle the entire pan with approximately ¼ cup of extra virgin olive oil and the juice of one lime. Then add about one teaspoon of minced garlic to the top of the fish only.
Lastly, put a dash or two of salt and pepper on the entire dish. (I obviously go by very precise measurements in this recipe).
Bake at 350 degrees for about 10 minutes, then put the broiler on high for another 2 or 3 minutes so that the broccoli & cauliflower can get a little more crispy. To serve the dish, I slice up an additional fresh lime for some extra zing.
This is a no-fuss, flavorful dish that you can make in under 20 minutes. That is a win win in my book! Enjoy!

- 2 cod fillets
- 1 head broccoli
- 1 head cauliflower
- ¼ cup extra virgin olive oil
- 2 fresh limes
- 1 teaspoon minced garlic
- dash of salt/pepper
Instructions
- Preheat oven to 350 degrees.
