You can't get a more delicious and simple side dish than this Rustic Green Bean & Potato Salad.

How often do you find yourself attempting the most ridiculous recipes with 5 thousand ingredients? Too often, I assume....myself included. I always try to out do myself, when sometimes the best dishes are the simplest.
Next time you feel obligated to make something fancy or unique for dinner, take a step back and try this recipe for Rustic Green Bean & Potato Salad. It will change your opinion on having to create an extravagant side dish for every meal.

WHAT INGREDIENTS DO I NEED FOR RUSTIC GREEN BEAN & POTATO SALAD?
- baby potatoes
- fresh green beans
- hard boiled eggs
- olive oil
- red wine vinegar
- minced garlic
- dry thyme
- salt/pepper

HOW DO I MAKE RUSTIC GREEN BEAN & POTATO SALAD?
Start by chopping potatoes into bite sized pieces. Trim the edges off of the fresh green beans and set aside for now.
Begin to heat a large pot of water to a boil. Once boiling, add the chopped potatoes and cook for approximately 10 minutes. Then add the green beans and cook for another 8 minutes, or until the potatoes and beans are tender.
Remove from heat and drain well.
While the potatoes & beans are cooling, combine olive oil, vinegar, minced garlic and thyme to create a delicious vinaigrette for the salad.

Chop the hard boiled eggs and add to your cooked beans & potatoes. Top everything with the vinaigrette and garnish with desired amount of salt & pepper.

Rustic Green Bean & Potato Salad
Ingredients
- 12 oz baby potatoes
- 12 oz fresh green beans
- 3 hard boiled eggs
- ⅓ cup olive oil
- ¼ cup red wine vinegar
- ½ teaspoon minced garlic
- ½ teaspoon dry thyme
- salt/pepper to taste
Instructions
- Start by chopping potatoes into bite sized pieces. Trim the edges off of fresh green beans and set aside for now.

- Add the green beans and cook for another 8 minutes, or until everything is tender. Remove and drain well.
- In a small bowl, or cup, combine the olive oil, vinegar, garlic, and thyme. Mix well.
- Chop the hard boiled eggs, add them to the cooked beans and potatoes.
- Toss everything with the vinaigrette and garnish with desired amount of salt & pepper.
