This recipe for Skinny Seafood Stew is intensely flavorful and surprisingly easy!

Raise your hand if you like the idea of a delicious seafood meal that is ready in under 30 minutes. This Skinny Seafood Stew is hands down my new favorite soup! It's comforting and perfectly satisfying without the feeling of over-indulging.
To all my readers who are die hard fans of thick and creamy seafood chowders, TRUST ME...this lighter version will blow you out of the water.
HOW DO I MAKE SKINNY SEAFOOD STEW?
Start by sautéing 4 tablespoon olive oil with 1 ½ cups yellow onion- chopped, 2 tablespoon minced garlic and ½ cup fresh parsley.

Add 1 14 oz can crushed tomatoes and continue to simmer for approximately 5 minutes.
Stir in 8 oz clam juice and ½ cup Sauvignon Blanc wine, along with 1 teaspoon dry oregano, 1 teaspoon dry thyme and dash of salt/pepper.
Carefully add the following seafood and continue to cook for another 10-15 minutes, or until seafood is fully cooked.
- 1 fillet of cod- chopped into bite sized pieces
- 1 cup lobster meat- chopped
- 1 cup small shrimp- peeled & deveined
*Feel free to add more or less of any seafood as you see fit.
When your soup is finished, carefully pour into bowls and top with hot sauce (optional).
