WHAT INGREDIENTS DO I NEED?
- 2 sheets puff pastry
- 1 cup ricotta cheese
- ½ cup plain greek yogurt
- 2 cups frozen spinach
- 2 eggs
- ½ cup shredded Parmesan cheese
- 1 teaspoon Italian seasoning
- 1 tablespoon minced garlic
- dash of salt & pepper
- Garnish: sesame seeds (optional)

HOW DO I MAKE SPINACH & RICOTTA ROLLS?
Start by thawing your frozen spinach. Once thawed, use a paper towel to squeeze out any excess moisture. Then, take your puff pastry out of the refrigerator and let it come to room temperature.
In a medium bowl, stir together the spinach, ricotta, greek yogurt, Parmesan cheese, Italian seasoning, minced garlic, salt/pepper, and ONE egg. Once you have a creamy mixture, set aside.
*If you feel like your mixture is too runny and you didn't get enough of the moisture out of the spinach. Feel free to add a bit more ricotta to the mixture.


Carefully roll out the puff pastry. Spread half of the spinach ricotta mixture along the edge of one puff pastry. Carefully roll up the pastry, in plastic wrap and refrigerate for about 20 minutes to set. Repeat steps with the remaining puff pastry and spinach mixture.


When you are ready to bake, remove the roll puff pastry from the refrigerator. Slice into 3 or 4 pieces. Place the pieces on a large baking sheet.
In a small bowl, whisk the second egg. Brush the top of each roll with egg and sprinkle with sesame seeds.

Bake at 350 degrees F for approximately 25-30 minutes, or until golden brown and flaky.
