These Turkey & Oat Meatloaf Muffins are the easiest dinner recipe and guaranteed to make you a meatloaf fan!
This is not your typical ketchup smothered meatloaf. My Turkey & Oat Meatloaf Muffins are super moist and flavorful, you won't believe how delicious and healthy they are!
They are little individual servings of your favorite comfort food, but without unnecessary calories and fat.
If you ask my husband, he would tell you I am a very organized person. Probably to the point of annoyance. But, either way I love to be on top of my game. Whether that is making sure meals are prepared for the week, workouts are scheduled, cleaning is done, and date nights are planned, I love to be prepared.
But, I must say, now that we have 4 kids, most of that is TOTALLY thrown out of the window. No longer do I don't have control of everything. When it comes to meals, I try to have a few things frozen so that if the day gets away from me, I can still have a healthy dinner I can pop in the microwave.
These Turkey & Oat Meatloaf Muffins are a great meal to have pre-made and ready to go, for a day that goes astray from your planned schedule.

WHAT INGREDIENTS DO I NEED?
- 1 lbs ground turkey
- 1 cup oats
- 1 egg
- 1-2 celery stalks chopped
- ½ onion chopped
- 2 tablespoon yellow mustard
- 2 teaspoon cumin
- 1 teaspoon salt/pepper
HOW DO I MAKE TURKEY & OAT MEATLOAF MUFFINS?
Start by preheating your oven to 375 degrees.
While the oven is warming up, chop your celery and onion into small pieces. (I prefer to chop up the entire celery stalk, green leafy part and all, because it adds more flavor. Most people trash that part of the stalk, but it's the secret treasure of the vegetable. You can use it as a fresh herb in other dishes as well.)
In a large bowl, combine 1 pound of lean ground turkey, 1 cup of oats, and the chopped vegetables.
Next, add 1 egg, 2 tablespoon of yellow mustard, 2 teaspoon of cumin, and 1 tsp of both salt and pepper. Mix well.
Evenly divide the meatloaf mixture into your muffin tins. Bake for approximately 30-40 minutes, or until golden brown and turkey is cooked through. Drizzle with your favorite hot sauce, if desired.

This is a perfect pre-portioned meal. Healthy, filling, and you can make a big batch at the beginning of each week to have ready for lunch or dinner. It's a great idea to have entrees already prepared, especially pre-portioned, for anyone watching their calories or for a busy family.
