I recently started introducing new vegetables and fruits to my son. It is such a fun process to see what he likes and dislikes. Luckily, he is a good eater and has loved almost everything I've given him, with the exception of squash.
But, as many of you know, this may not always be the case. If you have a picky eater and vegetables are not their thing, you need to try my recipe for Veggie Nuggets. Packed with broccoli, zucchini, carrots, potatoes and onions, these little bites are the ultimate nutritious meal for your kids.
WHAT INGREDIENTS DO I NEED?
- 1 cup broccoli
- ½ cup red onion
- 1 zucchini
- 1 large carrot
- 3 small red potatoes
- 1 cup breadcrumbs
- dash of salt
HOW DO I MAKE VEGGIE NUGGETS?
Start by roughly chopping 1 cup broccoli, ½ cup red onion, 1 medium zucchini, 1 large carrot and 3 small red potatoes. Place the vegetables into a large pot, cover with water and bring to a boil. Cook the vegetables for approximately 15-20 minutes or until they become tender.
Drain water and place the vegetables into a food processor. Pulse until you have broken down the vegetables and have a fairly smooth texture.
Next, place the vegetable mixture into a large bowl and add 1 cup of bread crumbs (you can use gluten free if you need) and a dash of salt. Cover and set it in your refrigerator for a few hours or overnight. This will allow the mixture to firm up.
When you are ready to cook, preheat your oven to 350 degrees F. Form small nuggets of the vegetable mixture and place onto a prepared baking sheet. Bake for approximately 25-30 minutes or until your veggie nuggets start to brown. Remove from oven and let cool.
