It's a soup kind of day for me. Cold weather, cloudy skies and a fire in the living room. I love days like this. As much as I talk about how I am a warm weather person (which I am), it's nice to have a relaxing cloudy day to mix things up. Snuggling under a blanket with a good book and a warm bowl of soup is hard to beat. Especially when it is with a bowl of my Cauliflower Soup.
It's not your hum drum chicken noodle, vegetable, or split pea soup. This recipe is full of herbs, overflowing with cauliflower and deliciously healthy. Don't even think about making another batch of your everyday, boring soup. Switch it up with my Cauliflower Soup and be pleasantly surprised by how flavorful simple, clean ingredients can be.

WHAT INGREDIENTS DO I NEED?
- 1 head cauliflower
- 2 cups chicken stock
- 2 celery stalks
- ½ cup yellow onion
- 1 cup carrots
- 1 teaspoon parsley, dill, salt, pepper
- 1 ½ teaspoon minced garlic
- 3 tablespoon olive oil

HOW DO I MAKE CAULIFLOWER SOUP?
Start by chopping 1 head of cauliflower into bite sized pieces. Place half of the chopped cauliflower into 2 cups of chicken stock and bring to a boil. Lower the heat to medium and continue to cook for approximately 10-15 minutes. Carefully pour the cauliflower stock into a blender, and mix the ingredients until you have a smooth consistency. Set aside for now.
In a large pot, sauté 2 celery stalks- chopped, ½ cup of yellow onion- chopped, 1 cup carrots- chopped, and remaining half of the chopped cauliflower with 3 tablespoon of olive oil. Once the vegetables become slightly tender, add 1 ½ teaspoon minced garlic, 1 teaspoon each- dried parsley, dried dill, salt/pepper.

Add the cauliflower/chicken stock back to the pot and simmer for another 20 minutes. Serve with a splash of your favorite hot sauce, if desired.
