Muesli is traditionally a Swiss breakfast or brunch dish based on raw rolled oats and other ingredients including grains, fresh or dried fruits, seeds and nuts. Typically it is mixed with your choice of milk, yogurt, and even fruit juice. I like to stick with almond milk and greek yogurt. Muesli is a great healthy breakfast option since it typically has less sugar and calories than most breakfast cereals at the supermarket. It’s high in fiber and whole grains, which is super filling and can aid in weight control.
I love that this is a set and forget meal. (I sometimes forget to SET it though, which is annoying….I can’t really blame it on “pregnancy brain” anymore, so I’ll just blame my forgetfulness on “newborn brain.”)
To create this delicious dish all you have to do is combine all the ingredients (1 1/2 cups oats, 1 1/4 cup almond milk- vanilla, 1/3 cup greek yogurt 0%, 1/2 apple- chopped, 1/4 cup pecans- chopped, 1/2 tsp cinnamon, and 2 tsp honey) in a large bowl, preferably one with a lid, so you can just place it in your refrigerator. Mix the ingredients well and place bowl in refrigerator overnight. It’s a piece of cake! All you have to do now is wait….the hardest part. You can add a splash more of almond milk in the morning if you don’t want the consistency to be too thick.

I love the simple combo of ingredients and being able to have fun with my breakfast. When I eat it, I like to add a little extra chopped fresh fruit and splash of almond milk on top in the morning. - 1 1/2 cups oats
- 1 1/4 cup almond milk- vanilla
- 1/3 cup greek yogurt 0%
- 1/2 apple- chopped
