Hi, my name is Julie and I love quinoa. I know, there are worse things to admit...But, quinoa is totally my jam. You can transform it into so many different things. Use it in a salad, soup, cake, granola, pizza crust, cookies, or simply as a side dish to compliment any meal.
One way I love to use quinoa is in my Spinach Quinoa Cakes. These bad boys are crispy, healthy and delicious. It's a perfect, light recipe to enjoy any day of the week.
WHAT INGREDIENTS DO I NEED?
- 3 cups cooked quinoa
- 1 cup chopped red onion
- 2 cups chopped fresh spinach
- ½ teaspoon garlic powder
- ½ teaspoon dried thyme
- 3 tablespoon flour (I used gluten free)
- 3 eggs
- salt/pepper

As I've said before, one way to make cooking throughout the week a little less stressful is to make big batches of simple ingredients like rice and quinoa. I love to have prepared, healthy staples like that in my refrigerator.
A few weeks ago, I made my Quinoa Pizza Muffins with a batch of leftover quinoa I had on hand. Talk about a lifesaver! You would be surprised how beneficial it can be for your health (and sanity) to have nutritional food waiting for you. I know I am much less tempted to pick up takeout if I have ingredients already prepped at the house.
HOW DO I MAKE SPINACH QUINOA CAKES?
In a large bowl combine 3 cups of cooked quinoa, 1 cup chopped red onion and 2 cups of chopped fresh spinach. Stir in ½ teaspoon garlic power, 1 teaspoon of dried thyme and a dash of salt & pepper.
Next, add 3 cracked eggs and 3 tablespoon of flour (I used gluten-free). Mix ingredients well and begin to form patties. (If your mixture is still a little wet, feel free to add more flour.)

Heat up a large non-stick skillet or griddle. Place the patties on the hot skillet and press down firmly so that each side gets nice and crispy. Cook approximately 2 minutes on each side, or until cakes begin to brown. Carefully remove the patties from your skillet and let them cool. Enjoy on a bed of spinach, as a sandwich, or simply by itself.
