You no longer need to worry about finding a way for your kids to eat green peas. This recipe for Pea & Parmesan Fritters is the perfect way to transform them into a meal your kids will gobble up.

Growing up I remember loving peas and until recently I totally forgot how much I enjoyed them. I guess when you get older, and no longer have your mom doing the grocery shopping, you never really think about buying a can of peas. It's one of the bummers of growing up.
Since I've been introducing more foods to my son, I have fallen back in love with peas. Luckily, he loves them as well. But instead of always giving them to him along side another dish, I decide to make these Pea & Parmesan Fritters and make them the star of the meal. He squeals with excitement every time he eats them!

WHAT INGREDIENTS DO I NEED?
- 2 15 oz. cans of green peas
- ¼ cup baby rice cereal
- ¼ cup flour (or gluten free flour)
- ½ cup parmesan cheese
- 3 eggs
- 1 tablespoon olive oil
- dash of salt & pepper
HOW DO I MAKE PEA & PARMESAN FRITTERS?
Start by opening and draining 2 15 oz. cans of green peas. Pour the peas into a large mixing bowl and begin to mash the peas with a potato masher or fork.
Once the peas are broken down, add the following ingredients and stir.
- ¼ cup baby rice cereal
- ¼ cup flour (or gluten free flour)
- ½ cup parmesan cheese
- 3 eggs
- 1 tablespoon olive oil
- dash of salt & pepper
Once everything is mixed well, heat up a griddle or large non-stick skillet. Spoon a small amount of the pea mixture onto your griddle and cook for approximately 2-4 minutes on each side, or until you have a crispy outer layer.
The batter may seem a little sticky at first, but as long as you leave the fritters on each side for at least 2 minutes (depending on how hot your skillet is) you should have no issues flipping them.
In less than 15 minutes you can have a batch of delicious and nutritious vegetable fritters you kids will love. Store a few bags in your refrigerator for the week and a few in the freezer for a later date.
