WHAT INGREDIENTS DO I NEED FOR CAULIFLOWER RICE TACOS?
- 1 lb bag frozen cauliflower rice (A time saver for this recipe is using frozen cauliflower rice. You can always make your own, if you'd like)
- ½ cup chopped walnuts
- 1 packet Taco seasoning (I used mild seasoning, so my kids could handle it)
- 2 tablespoon vegetable oil (or preferred)
- Optional toppings: shredded cheese, jalapenos, cilantro, hot sauce, etc
- 8-10 small tortillas (preferred type- I used almond four tortillas)
HOW DO I MAKE CAULIFLOWER RICE TACOS?
STEP 1: Begin to heat oil in a large skillet over medium heat.
STEP 2: Add cauliflower rice to the skillet and continue to sauté until rice is no longer frozen.
STEP 3: Stir in chopped walnuts & taco seasoning. Lower heat and continue to sauté for another 10 minutes, stirring often.
STEP 3: Remove from heat and let cool slightly before forming your tacos.
