This Fresh Corn Salsa recipe is a little sweet, tangy and spicy. It's the perfect condiment to your burritos, salads, tacos and more!
I love to test out new versions of salsa. But this one is my new favorite! It is a perfect alternative to the same old, tomato-based salsa everyone is familiar with.
It has tons of bright flavors and a nice little kick from the fresh jalapenos.
It reminds me of a fresh pico de gallo, that can be enjoyed however you wish!
WHAT INGREDIENTS DO I NEED FOR FRESH CORN SALSA?
- 2 15 oz can of whole corn kernels
- ½ red onion
- 1 roma tomato
- ½ cup fresh cilantro
- 1-2 fresh jalapenos
- Juice of 1 lime
- 1 teaspoon chili powder
- Dash of salt & pepper
HOW DO I MAKE FRESH CORN SALSA?
- Drain liquid from the cans of corn.
- Finely chop the onion, tomato, cilantro and jalapenos.
- Place the chopped ingredients into a large bowl.
- Add lime juice, chili powder, salt & pepper.
- Mix all ingredients well.
- Enjoy!

Had fish tacos the other night and made Corn Salsa as a side dish. I made a double recipe. Just like you said, some folks dug in with corn chips and others had it as a side with the fish tacos. It disappeared. That's the bad news. No leftovers. Next time, it will be a triple recipe! Muy Bueno!
