This homemade Gingerbread Granola is perfectly sweet, crunchy and full of so much flavor. A delicious breakfast to start your day with, or to snack on to keep yourself going!
Today I'm bringing you an incredibly delicious recipe and I'm sure you're going to love it! Classic flavors and warm spices of gingerbread come together for the perfect crunchy granola that will make your house smell like Christmas!
You can enjoy it on it's own (warning: it's way too easy to eat by the handful), as a topping for your morning yogurt or with milk like a bowl of cereal.
While there is a lot of good (and healthy!) store bought granola out there, I love to make my own because it allows me to control exactly what’s included. If you haven't tried my other granola recipes, you need to:

WHAT INGREDIENTS DO I NEED FOR GINGERBREAD GRANOLA?
- 2 cups oats
- 1 cup pecans
- 1 cup pumpkin seeds
- ⅓ cup coconut oil- melted
- ¼ cup maple syrup
- ⅔ cup molasses
- 2 teaspoon cinnamon
- ½ teaspoon ginger
- ½ teaspoon all-spice
- dash of salt
HOW DO I MAKE GINGERBREAD GRANOLA?
STEP 1: Preheat oven to 300 degrees F.
STEP 2: In a large bowl combine your oats, nuts and seeds.
STEP 3: Add your coconut oil, maple syrup and molasses. Stir well so that everything is coated.
STEP 4: Spread the mixture evenly on a large baking sheet.
STEP 5: Top with the remaining dry seasonings. (I like to do this, instead of tossing in a bowl, so that the seasonings don't get left stuck to the bowl.)
STEP 6: Bake for approximately 30-40 minutes, stirring often. Once the granola is slightly golden brown, remove and let cool on pan. It will become more crunchy as it cools.
