These gooey brownies with fluffy peppermint icing are the best way to celebrate Christmas. No one will ever know they are gluten free and dairy free.
When Christmas rolls around I am always looking for fun new recipes to test out on my family. Some turn out great, others...not so much. For example, my attempt at a Christmas coconut macaroon recently turned into a rock hard piece of crap. But, I refuse to give up! I will try again and make sure to tell you if they turn out good or not.
This past week I created a yummy treat my entire family loved. These {Gluten Free} Brownies with {Dairy Free} Peppermint Icing are the bomb! Never mind setting them out for Santa, I'm keeping them all for myself.
Let's get down to the brownie nitty gritty. To create this recipe I used a box of Glutino Double Chocolate Brownie Mix, but swapped out a few ingredients. Instead of butter I used natural applesauce, decided not to add nuts (so my son could easily eat them), and added a little extra vanilla extract. All of which are optional. You can always stick to the regular box recipe to keep things a little more simple.
HOW DO I MAKE GLUTEN FREE BROWNIES WITH PEPPERMINT ICING?
In a large bowl beat together 2 eggs, ⅓ cup applesauce and ½ teaspoon vanilla extract. Slowly add the dry box mix until all the ingredients are well combined.
Pour the batter into a prepared 8x8 baking dish. Bake at 350 degrees F for approximately 30 minutes. Remove brownies from oven and let cool.
To create the dairy free frosting, place one 13 oz can of coconut milk in your refrigerator overnight. Be sure not to shake or tip the can. We want to make sure the liquid and cream separate while chilling.
When your brownies are ready to be frosted, open the can of coconut milk and remove the top layer of thickened cream. Place it in a bowl and using a hand mixer or stand mixer, beat the cream for a few minutes or until you have stiff peaks. (Be patient, this may take longer than you think). When you have the consistency you are looking for, add the following ingredients and mix for another minute or two.
- 2 teaspoon maple syrup
- ½ teaspoon vanilla extract
- 1 teaspoon peppermint extract
Carefully spoon the frosting onto your brownie and smooth it out evenly. (Did I mention this frosting is like biting into a deliciously fluffy cloud? yummmm)

- ½ teaspoon vanilla extract
- 1 teaspoon peppermint extract
Instructions
