As you could probably guess, I am one of "those" people who decorates for Christmas weeks before Thanksgiving. I try to fully embrace the holiday season as long as possible. Why not? I say, if it makes you happy, put up those decorations and enjoy the festive spirit a little while longer.
One special reason I decided to bust out the "ho ho ho" a little early this year is because it's our first Christmas as a family of 4 (5 if you include our dog, Bailey)! After delivering our second son in the middle of my husbands 7-month deployment and having him miss the first couple months, I knew we needed to cherish the holidays a little more. So I wanted to make it especially fun for my little family.
Life in the military is never easy, but we consider ourselves super lucky to be able to spend the holidays together. Bring on the Christmas decorations, movies, music, drinks and sweet treats!
I don’t know about you, but I simply can’t decorate my tree without a festive treat. This year I created a recipe for {Gluten Free} Holiday Chocolate Peppermint Biscotti. They are delicious! It's hard to imagine the holidays without enjoying a cup of coffee and a peppermint treat of some kind. It's a rule somewhere, I'm sure. But let's be honest, it's the coffee that really gets us through the holiday season. Am I right?
Shopping, cooking, traveling, decorating...it can all be tiring. Luckily, I am a huge fan of the Starbucks® Holiday Blend K-Cup® Packs 16 ct you can find at Walmart. It makes life so much simpler during crazy times. ‘Tis the season to jolly, not grumpy because you are tired.
I can't wait to share this recipe with you. These are the BEST biscotti of the season! Make them for your holiday party, yourself, or as a gift, either way, it's a treat that everyone will enjoy.
HOW DO I MAKE {GLUTEN FREE} HOLIDAY CHOCOLATE PEPPERMINT BISCOTTI?
Start by combining the following dry ingredients into a large bowl:
- 1 ½ cups all purpose gluten free flour
- ¼ cup ground flax
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ cup cocoa powder
Next, mix in the following wet ingredients:
- ⅓ cup honey
- 2 eggs
- 3 tablespoon coconut oil (melted)
- 2 teaspoon vanilla extract
- 1 teaspoon peppermint extract
Once the ingredients are well combined, spread the dough onto a piece of parchment paper. (I like to form it with my hands into a long rectangular shape, approximately ½-1 inch thick.) Place the dough in your refrigerator for about 15 minutes then bake for 20 minutes at 350 degrees F.
When your dough is finished baking, remove it from the oven and let cool before slicing. While it is cooling, it's time to make the chocolate glaze that will help stick the peppermint chips to the biscotti.
In a small microwave-safe bowl, combine the following ingredients:
- 2 tablespoon coconut oil
- ¼ cup + 1 tablespoon chocolate chips
Microwave for 10-15 seconds at a time, until you have a smooth consistency.
Finally, we get to the fun/messy part that all kids enjoy taking part in... Take your sliced biscotti, dip one side into the chocolate glaze, then crumble the desired amount of peppermint chunks (or peppermint chocolate chips) on top. Set the biscotti on a drying rack or large plate to dry.
