I love cooking with fresh vegetables. However, there is always a time when I find myself reaching for frozen ingredients. There is nothing wrong with that.
Frozen meatballs and vegetables are perfect when you have a busy week and need something quick to cook. As a mom of 4, I am all about ease and speed when it comes to getting food on the table.
This Sweet & Sour Meatball Stir-fry is a quick and nutritious meal you can feel good about feeding your family. The homemade sweet & sour sauce kicks it up a notch!

WHAT INGREDIENTS DO I NEED:
- 24oz frozen pre-cooked meatballs (whatever you prefer- beef, turkey, chicken, pork)
- 12oz frozen pepper & onion mix
- 4 tablespoon peanut oil
- approx. 1 ½ - 2 cups Homemade Sweet & Sour Sauce (or store-bought)
- Optional: sesame seeds
Homemade Sweet & Sour Sauce:
- ½ cup brown sugar
- ⅓ cup ketchup
- ½ cup apple cider vinegar
- 1 tablespoon soy sauce
- 1 teaspoon minced garlic
- ¼ cup water
- 1 tablespoon corn starch

HOW DO I MAKE SWEET & SOUR MEATBALL STIR-FRY?
STEP 1: Start by creating the homemade sweet & sour sauce. In a small pot, begin to heat the brown sugar, ketchup, apple cider vinegar, soy sauce and garlic. Stirring constantly until the sugar has melted and everything is mixed well.
STEP 2: In a separate bowl, whisk together the water and corn starch. Pour the mixture into the pot and continue to simmer on low heat until your sauce begins to thicken. It should coat your spoon, but not be too thick. *Feel free to add more corn starch, if you want a thicker consistency.
STEP 3: Now to create the stir-fry. In a large, deep skillet begin to heat the peanut oil. Add your frozen meatballs and continue to cook until browned and tender.
STEP 4: Add the frozen vegetables and continue to simmer, until they are no longer frozen.

STEP 5: Stir in the homemade sweet & sour sauce. Cook for an additional 5-10 minutes. Remove from heat and garnish with sesame seeds.
This Sweet & Sour Meatball Stir-fry is a yummy dinner that is better then any take-out. Serve it with rice or noodles for the ultimate weeknight meal.
