When Cinco de Mayo rolls around, it's usually filled with traditional Mexican fare (along with eating too much). Besides Thanksgiving, I'm pretty sure Cinco de Mayo is a major diet wrecker for a lot people. Don't be ashamed...we've all done it.
While for many years I've been able to avoid partaking in the holiday, because I do not consume dairy or beef, this year is another story. I have created the perfect version of my favorite Mexican food that I can now eat without guilt or worry.
Don't skimp out on the nachos, just because you are vegan or can't consume dairy products. Trust me, you CAN have deliciously loaded nachos that are vegan. This recipe for Ultimate Vegan Nachos will transform your opinion on boring "vegan" food. Crispy chips, creamy black bean spread and spicy corn salsa all come together for the perfect summer time celebration. Serve it as an appetizer or main dish...either way, you have an ultimate recipe that is like no other.

Beside nachos, what type of party host would I be without serving the best drinks? Honestly! I know I am known as "The Healthy Home Cook", but there are times when we all need to be a little carefree and enjoy the moment. Two of my must haves for summer-time parties are Corona Extra and Modelo Negra. They compliment my Ultimate Vegan Nachos perfectly and are a great addition to any party.
With a refreshing, smooth taste balanced between heavy imports and light domestic beer, Corona Extra is so much more than just a vacation beer. It's a beer you can enjoy Tuesday afternoon at home or out on a Saturday night. It's for those of us who believe the statement "Saber Vivir" ("knowing how to live").
If you are looking for a more medium-bodied lager, Modelo Negra is for you. It has a deliciously rich, smooth taste that is just what you need to celebrate Latino culture with.
HOW DO I MAKE ULTIMATE VEGAN NACHOS?
Start by blending one 15 oz can of black beans with ½ cup of your favorite salsa. Once the ingredients are mixed and you have a smooth texture, set aside for now.

Next, you will create my Fresh Corn Salsa. It's a delicious, refreshing take on the traditional salsa you may be bored with. Simply combine the following ingredients:
- 1 18oz can of whole corn kernels (no salt added)
- ½ red onion
- 1 tomato
- ½ cup fresh cilantro
- ¼ cup jalapenos
- Juice of 1 lime
- 1 teaspoon chili powder
- pinch of salt & pepper

Now it's time to build your nachos. Start by laying out a desired amount of chips on a large plate or tray. If you would like to use vegan cheese, go ahead and spread it on your chips and microwave until melted. It is not a deal breaker if you don't use vegan cheese. I often make these nachos without it.
Once your cheese is melted, layer your nachos with the black bean spread and corn salsa. Top with fresh cilantro, jalapeno slices, chopped avocados and lime slices. Easy as that!
