I am obsessed with this Grilled Polenta. It is a compliment to any meal and my go-to recipe for the grill this summer.
I love a good, easy side dish recipe. Nobody wants a recipe with 20 different ingredients that takes more time to make than the main dish.
I say at your next party, try swapping out the usual cornbread for this delicious and easy Grilled Polenta. With just 4 ingredients you can create an awesome side that kids and adults will devour. It's gluten free, vegan and oil free...talk about a win, win, WIN!
WHAT INGREDIENTS DO I NEED?
- 2 cups water
- 1 cup corn meal
- 1 teaspoon salt
- 1 teaspoon Italian seasoning
HOW DO I MAKE GRILLED POLENTA?
Start by bringing 2 cups of water to a boil. Add in 1 cup of corn meal and lower heat to a simmer. Continue to cook until water is fully absorbed by the meal (make sure to stir often so it doesn't burn on the bottom of pot). Next, stir in 1 teaspoon of salt and 1 teaspoon of Italian seasoning.
Once it is finished cooking, remove from stove and pour the corn meal onto a large plate, pan or baking sheet. I like to line my pan with parchment paper, so the polenta is easier to remove later. Smooth the mixture out so you have about a ½- 1 inch thick layer, then place in your refrigerator for at least an hour or two to let the the polenta firm up.
When you are ready to grill, slice the polenta into strips. Place onto grill and cook for about 4-6 minutes on each side, or until you have grill marks. When they are finished, carefully remove from the grill and let cool.

With crispy edges and a soft center, this Grilled Polenta will be the star of the show. There is no need to look for another side dish for your next summer party. This is it!
