Baked in the microwave, nothing beats this individual chocolate cake loaded with mini marshmallows & chocolate chips. Ready in just a few minutes. Gluten free version, as well!

When you are home alone and craving a chocolate cake, it's hard to make a good enough excuse to bake an entire cake. But with this incredibly easy recipe, you can make a perfectly portioned dessert whenever that craving strikes. It's fluffy, moist, and full of everything you love about hot chocolate!

WHAT INGREDIENTS DO I NEED?

3 tablespoon all-purpose or gluten free flour (I used King Arthur)
2 tablespoon cocoa powder
¼ teaspoon baking powder
2 tablespoon sugar
dash of salt
3 tablespoon milk (I used almond milk)
1 ½ teaspoon coconut oil - melted
desired amount of mini marshmallows & mini chocolate chips

HOW DO I MAKE HOT CHOCOLATE MUG CAKE?

In a bowl, whisk together all the dry ingredients.

Mix in the milk and melted coconut oil until you have a smooth batter.

Spoon half of the batter into your mug, then toss in a few mini marshmallows and mini chocolate chips. Top with the remaining batter and cook in your microwave for 1 minute.

Carefully, remove mug from the microwave and top with a few additional mini marshmallows. Let the cake cool slightly before enjoying!
