These Easy Cottage Cheese Egg Muffins are a savory breakfast that's high in protein and packed with flavor. Only 4 ingredients and less than 30 minutes to make!

I’m always on the hunt for the easiest (and most delicious) high-protein breakfast possible. Plus, I've really been stepping up my meal prep game lately. That being said, this recipe for Easy Cottage Cheese Egg Muffins is always on my weekly rotation.
Not only are the muffins ready in no time, but they are the perfect grab and go meal. Just pop them in the microwave for a quick protein-packed breakfast all week long.

WHAT INGREDIENTS DO I NEED?
- 6 eggs
- 1 cup cottage cheese
- ½ cup preferred salsa
- 16oz turkey sausage
- salt & pepper to taste

HOW DO I MAKE EASY COTTAGE CHEESE EGG MUFFINS?
Start by cooking the turkey sausage in a large skillet, until crumbled and cooked through.
In a large bowl, whisk together the eggs, cottage cheese and salsa.
Next, prepare your muffin tins by spraying with nonstick cooking spray, or lining each tin with cupcake liners.
Spoon preferred amount of the cooked turkey sausage in each muffin tin. Carefully spoon the egg mixture over top. Add salt & pepper, if desired. Bake at 350 degrees F. for approximately 25 minutes, or until fluffy and golden.
