Mini meatballs made with lean turkey and savory sweet potatoes.

It’s always super important to me to have a few fast and healthy dinners in my repertoire. Meatballs may not be the most impressive things to make in your kitchen, but they sure are a lifesaver when life gets busy.

Do you ever end up at the end of the day feeling worn out and not in the mood to cook? Silly question, right?....Well, that's when meatballs can come to your rescue! Make a bunch, freeze, then simply warm and eat whenever it's an ideal opportunity for you.
Not only is this recipe for Sweet Potato & Turkey Bites an easy recipe, but a great way to add flavor and protein to your meal using inexpensive ground turkey.
WHAT INGREDIENTS DO I NEED?
- 1 sweet potato
- 1 lb ground turkey
- ¼ teaspoon smoked paprika
- ½ teaspoon garlic salt
- 1 teaspoon onion powder
- 1 egg
- ¼ cup Plain, fine bread crumbs

HOW DO I MAKE SWEET POTATO TURKEY BITES?
Start by chopping 1 large sweet potato into chunks and steam until tender. When it is soft, remove the skin and place in a large mixing bowl.
Add 1 pound of ground turkey and the following ingredients:
- ¼ tsp smoked paprika
- ½ tsp garlic salt
- 1 tsp onion powder
- 1 egg
- ¼ cup Plain, Fine bread crumbs
Mix well and form into small balls. Place meatballs on a prepared baking sheet and bake at 375 degrees F. for approximately 30 minutes.

These delicious kid-friendly baked meatballs are a winner with adults and children alike. I love making a big batch of these for the week and using them for many different recipes.

Sweet Potato & Turkey Bites
Ingredients
- 1 sweet potato
- 1 lbs ground turkey
- ¼ teaspoon smoked paprika
- ½ teaspoon garlic salt
- 1 teaspoon onion powder
- 1 egg
- ¼ cup Plain, Fine bread crumbs
Instructions
- Chop sweet potato into large chunks and steam (or microwave) until tender.
- Remove skin of sweet potato and combine with ground turkey.
- Add remaining ingredients, form mixture into small balls.
- Bake at 375 degrees F. for approximately 30 minutes.

Do you cook the turkey before mixing?

No, you do not cook the ground turkey before mixing with the other ingredients. The only thing you cook before is the sweet potato, to make sure it is soft.
