Breakfast just got a little sweeter with these homemade Blueberry Stuffed Breakfast Bars.
Happy Monday! I am super excited to share this new recipe with you. But first- how many of you use to eat Pop-tarts or Toaster Strudel growing up? I'm not going to lie, I definitely enjoyed a few of them in my day. It was an easy grab and go breakfast or snack when I was in high school. Little did I know (or care) what was in them. I just knew they tasted good.
Fast forward to today, to a time when I actually care what I eat and nothing goes into my body without reading a label. I'm not as carefree as I once was. But I am definitely much healthier, stronger and happier than I was in high school.
But, just because I watch what I eat, doesn't mean I can't have the same type of fun food. I just make them myself and use the ingredients I want.
These Blueberry Stuffed Breakfast Bars are a throw back to the old Pop-tarts we grew up on, without the refined sugar, white flour and artificial ingredients. They are wonderfully soft and sweet, just perfect for breakfast or a snack.
HOW DO I MAKE BLUEBERRY STUFFED BREAKFAST BARS?
In a large bowl combine 1 ½ cup of blended oats with 1 cup of regular oats. Then, stir in the following ingredients:
- ½ teaspoon cinnamon
- dash of salt
- 3 tablespoon melted coconut oil
- 1 egg
- 2 tablespoon Greek yogurt- 0% plain
- 2 tablespoon honey
- 2 teaspoon vanilla extract
Once the ingredients are well mixed, roll the dough into a large ball and let set for approximately 10 minutes. Then you can roll the dough out and cut into squares (I was able to cut out 10).
Place the cut dough in your freezer for 10-15 minutes.
Remove dough from freezer. Slice each piece in half. Top one side with a spoonful of blueberry preserves, then top with other half and press down edges firmly.
Bake at 350 degrees F for 10-15 minutes.
*Feel free to customize the recipe to your liking by substituting the blueberry jam for any other.
These Blueberry Stuffed Breakfast Bars are deliciously sweet and healthy. You will never want the store bought version again!

sounds wonderful! what are "blended oats"?
Julie says
Oats that you simply blend to make a powder/flour.

I just made these today. If I had known they were this good I would have doubled the recipe. They are so easy to make. I didn't have blueberry preserves so I used blackberry and they were wonderful. Plan to make them again and try different flavors. Absolutely delicious
