Fresh fruit, crunchy granola and creamy chia seed pudding all come together for a perfect grab and go breakfast!

I am a big fan of different textures in my recipes. Not only that, but flavors, too! I love sweet & salty, creamy & crunchy, and hot & cold. You could say it's due to my indecisiveness. But that's OK. My indecisiveness came up with this yummy Lemon Blueberry Chia Parfait.
Delicious layers of sweet chia pudding, crunchy granola and fresh blueberries creates a masterpiece of beautiful flavors. It is my current obsession in the morning. You have to try it!

HOW DO I MAKE A LEMON BLUEBERRY CHIA PARFAIT?
To create the chia pudding, combine 1 cup vanilla reduced sugar almond milk, 3 ½ tablespoon chia seeds, ½ teaspoon vanilla and 1 teaspoon honey. Stir together and place in refrigerator to set (anywhere from 2 hrs to overnight).
Next, to create the granola layer, follow the instructions found on my post for Lemon Zest Granola. It's crunchy, tangy and slightly salty. Basically, the best addition to this parfait!
When you are ready to create the parfait, simply layer the chia pudding with my Lemon Zest Granola and fresh blueberries. Use your own discretion with the amount to use for each layer. I'm not one to judge...
