This Lemon Herb Chicken Broccoli & Rice is a flavorful one-pot wonder that’s perfect for any night of the week. Just a handful of ingredients and less than 30 minutes is all you need to create this amazing meal.
HERE'S WHAT YOU WILL NEED:
- 3 chicken breasts
- 2 cups chopped broccoli
- 1 ½ cups short grain rice
- 2 ½ cups chicken broth
- 4 tablespoon olive oil
- 1 teaspoon Italian seasoning
- 2 lemons
- dash of salt & pepper
HOW DO I MAKE ONE POT LEMON HERB CHICKEN BROCCOLI & RICE?
STEP 1: In a large Dutch oven, begin to heat olive oil. Season the chicken with salt & pepper. Feel free to use a large pot or deep skillet if you do not have a Dutch oven.
STEP 2: Carefully place the chicken in the hot oil and brown on both sides, then transfer to a plate. The chicken breasts will not be cooked through at this point, but do not worry...we will return them to the pot.
STEP 3: Lower the heat to a low. Add the broth, rice and Italian seasoning to your pot. Scrape the bottom to remove any stuck pieces of chicken. Let the rice cook for 2-3 minutes, then return the chicken to your pot, along with chopped broccoli.
STEP 4: Top everything with the juice of 1 lemon. Slice the second lemon and add to the pot. Cover and continue to simmer for approximately 20 minutes, or until rice is tender and the chicken is fully cooked.
