Oven Roasted Cauliflower Hummus: A chickpea free recipe with all the texture and flavor of traditional hummus.
I love a good veggie dip and this Oven Roasted Cauliflower Hummus is my new fav. It's the perfect low carb dip or spread!
If you’re trying to eat healthier or happen to be following the Whole30 program (which doesn't allow you to eat legumes), try swapping the usual garbanzo beans for cauliflower. It’s a great tasting alternative.
WHAT INGREDIENTS DO I NEED?
- 1 head of cauliflower
- 3-5 tablespoon olive oil
- ½ teaspoon garlic salt
- 1 tablespoon lemon juice
- dash of salt & pepper

Cauliflower has become a staple for low carb, keto and whole30 people. It can mimic the taste and texture of starchy foods without carbs. You can find people swapping it for rice, pizza crusts, and mashed potatoes.
HOW DO I MAKE OVEN ROASTED CAULIFLOWER HUMMUS?
To create this easy Oven Roasted Cauliflower Hummus, start by chopping 1 large cauliflower into small chunks. Drizzle with 1-2 tablespoon of olive oil and a dash of salt & pepper. Bake at 350 degrees F for 30 minutes.

Remove the cauliflower from your oven and place it in food processor. Add 3 tablespoon olive oil, ½ teaspoon of garlic salt, 1 teaspoon lemon juice and a dash of salt & pepper.
Blend until you have a smooth consistency.

This creamy, dreamy dip is just begging to be scooped up onto a wedge of pita bread or fresh veggies. Make a batch and let me know what you think!
