These Sweet Potato Cranberry Breakfast Bars are soft, slightly sweet, tangy and satisfying with every bite.

How many of you like to bake in the fall? Silly question right?! I'm pretty sure it's a rule to bake something this time of year.
Even though you may love your Grandma's traditional apple or pumpkin pie recipe, sticking to a healthy diet in the fall/winter is important. A healthy diet is one of the best weapons to fend off all the germs that starts to creep their way in your door.

In the fall my number one flavor request isn't pumpkin or chai, it's sweet potato and cranberries. The combination is hard to beat. That's why I am in love with these Sweet Potato Cranberry Breakfast Bars.
WHAT INGREDIENTS DO I NEED?
- 1 medium sweet potato
- 1 cup oats
- 1 egg
- 2 tablespoon natural maple syrup
- ½ teaspoon baking powder
- ½ teaspoon ground cinnamon
- ¼ cup almond milk
- 1 teaspoon vanilla extract
- 1 tablespoon melted coconut oil
- preferred amount of dried cranberries
HOW DO I MAKE SWEET POTATO CRANBERRY BREAKFAST BARS?
To create this yummy breakfast, start by microwaving 1 medium sweet potato until soft. (I use a steamer, but you can simply poke holes in the potato and cook for a few minutes until it is easier to slice in half. Then continue to cook for 2-3 minutes at a time, until you can easily scoop the potato away from the skin.)
While the sweet potatoes are cooking, blend 1 cup of oats until you have a fairly fine consistency.

When the potato is finished microwaving, carefully peel and mash the potato. Combine it with the oats and remaining ingredients. Stir well so everything is evenly mixed.
Pour the batter into a parchment paper lined baking dish (I used a 9x9 baking tin). I like to add a few extra dried cranberries on top.
Bake at 350 degrees F for approximately 25 minutes. Remove from oven and let cool before slicing.
