This Cheesy Salsa Verde Chicken & Rice Skillet is a quick, one-pot dinner that is super tasty and has everything you need for a hearty, balanced meal.

WHAT INGREDIENTS DO I NEED?
- 2-3 chicken breasts
- 1 cup rice
- 16 oz salsa verde
- ½ red onion - chopped
- 1 teaspoon garlic powder
- 2 teaspoon cumin
- 1 cup water
- 4 slices pepper jack cheese
- 2 tablespoon olive oil (or preferred)
- 2 tablespoon fresh cilantro
- dash of salt & pepper

HOW DO I MAKE CHEESY SALSA VERDE CHICKEN & RICE?
Start by cutting your chicken breast into bite-sized pieces. Season with salt, pepper, garlic powder and cumin.

In a large skillet, begin to heat the olive oil. Add the seasoned chicken, sauté until browned and mostly cooked through. Then remove the chicken from the skillet and set aside.
Add the chopped red onion to your skillet, sauté until tender and translucent.
Stir in the water, salsa verde and rice. Lower heat, cover, continue to simmer until rice is tender.

Once the rice is cooked, add the chicken back to the skillet along with fresh cilantro. Top with pepper jack cheese. Cover skillet with a lid and let the cheese melt.


Once your cheese has melted, remove from heat and garnish with additional cilantro if desired.
