These homemade Rice & Vegetable Taquitos will rival anything you’ll buy at the store. Deliciously seasoned and baked until warm and crispy. It's a ridiculously easy recipe everyone will love!

If you are ever in a pinch for an quick & easy recipe that can feed a crowd, these Rice & Vegetable Taquitos are perfect! They are loaded with nothing but healthy ingredients and perfect as an easy dinner or party appetizer. Even if there isn't a party happening, you will want to make these just for yourself!

It's hard for me not to find a Mexican recipe that I love. Being from Texas, I always make sure to have Mexican food at least once or twice a week. I can never go too long without a good, spicy meal!
I am particularly in love with taquitos (often called rolled tacos). Not only are these Rice & Vegetable Taquitos vegetarian, they are baked instead of the usual fried version you find at restaurants. Lighter and much healthier for you! It's the perfect recipe for dipping in salsa and my homemade guacamole. Trust me, you will want to make them over and over again.
WHAT INGREDIENTS DO I NEED?
- approx. 20 small flour tortillas (you can always swap with corn tortillas, if you prefer)
- 1 15oz can of black beans - drained
- 1 15oz can of corn kernels - drained
- ½ red onion chopped
- 1 cup preferred cooked rice (white, brown, etc) - you can make the rice on your own, or use store-bought prepared rice.
- 1 tablespoon cumin
- 1 teaspoon garlic salt
- 1 cup shredded mozzarella cheese
- preferred cooking spray (vegetable oil, olive oil, avocado oil, etc)

HOW DO I MAKE RICE & VEGETABLE TAQUITOS?
Start by preparing the rice, depending on the type you are using. I originally created this recipe using black rice. It gives a little more nutty, crunchy texture to the taquitos. But any rice can be used in this recipe. Once the rice is cooked, set aside for now.
In a large bowl, combine 1 15oz can of black beans, 1 15 oz can of corn, ½ chopped red onion, the cooked rice, 1 tablespoon of cumin, 1 teaspoon of garlic salt and cheese. Mix ingredients well and set aside.

To assemble, take one tortilla, spoon in rice/vegetable mix, and carefully roll up. Place the taquitos on a prepared baking sheet (with non-stick cooking spray). Once you have filled your baking sheet with taquitos, spray the top of the taquitos with additional cooking spray. This will help them become extra golden brown and crispy.

Bake at 375 degrees F for approximately 20-30 minutes, or until your tortillas become slightly brown. The taquitos will become more crunchy after you remove them from oven and let cool.
